Recipe | Black Bean and Lentil Soup





Ingredients:

  • 2 carrots, peeled and diced (or shredded)
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup lentils (I used green)
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp pepper
  • 1/2 tsp sea salt
  • 1/2 tsp red pepper flakes
  • 4 cups vegetable broth
  • 1/4 cup colby jack cheese, optional
Instructions:
  • Combine all ingredients, except cheese, into crockpot.
  • Give a good mix around.
  • Cook on low for 6-8 hours or on high for 2-4 hours
  • Serve in a bowl with cheese sprinkled on top.
  • Enjoy!
