Recipe | Black Bean and Lentil Soup
Ingredients:
- 2 carrots, peeled and diced (or shredded)
- 1 can (14.5 oz) diced tomatoes
- 1 cup lentils (I used green)
- 1 can (15 oz) black beans, rinsed and drained
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp pepper
- 1/2 tsp sea salt
- 1/2 tsp red pepper flakes
- 4 cups vegetable broth
- 1/4 cup colby jack cheese, optional
Instructions:
- Combine all ingredients, except cheese, into crockpot.
- Give a good mix around.
- Cook on low for 6-8 hours or on high for 2-4 hours
- Serve in a bowl with cheese sprinkled on top.
